Garbanzo Sandwich Filling with Pita Bread

1 cup finely chopped cucumber | (Unpeeled) Washed and finely chopped |
1 cup plain nonfat yogurt | For vegan: use vegan yogurt |
2 tablespoons minced onion | Washed, peeled, and minced |
1 1/2 teaspoons garlic | Washed, peeled and minced |
2 teaspoons light mayonnaise | For vegan: use vegan mayonnaise |
1 1/2 teaspoons dill weed | |
8 Pita bread | For vegan: ensure vegan pitas |
1 Medium tomato | Washed and chopped |
8 Lettuce leaves | Washed |
1 cup shredded low fat mozzarella cheese | For vegan: use vegan mozzarella cheese |

1 | Drain and rinse garbanzo beans and mash in a food processor, blender or with fork. | |
