Garbanzo Sandwich Filling with Pita Bread

Portion Size: ½ cup mixture, 1 pita bread

Ingredients: Yields: 8 servings

Ingredients Notes: 
2 cans (16 ounce) garbanzo beansDrained and rinsed
1 cup finely chopped cucumber(Unpeeled) Washed and finely chopped
1 cup plain nonfat yogurtFor vegan: use vegan yogurt
2 tablespoons minced onion Washed, peeled, and minced
1 1/2 teaspoons garlicWashed, peeled and minced
2 teaspoons light mayonnaiseFor vegan: use vegan mayonnaise
1 1/2 teaspoons dill weed 
8 Pita breadFor vegan: ensure vegan pitas
1 Medium tomatoWashed and chopped
8 Lettuce leaves Washed
1 cup shredded low fat mozzarella cheeseFor vegan: use vegan mozzarella cheese

1Drain and rinse garbanzo beans and mash in a food processor, blender or with fork.
2Add cucumber and onion to garbanzo beans.  
3Mix yogurt, mayonnaise, and dill weed to garbanzo beans. Chill.
4Fill pita bread pockets with lettuce leave, tomato, cheese, and garbanzo bean mixture.
