Quesadilla Pizza

| 1 pound shredded low fat cheddar cheese | For vegan: use vegan cheddar cheese |
| 2 Tablespoons vegetable oil | |
| 1 cup pizza sauce | For vegan: ensure vegan sauce |
| 1 teaspoon ground cumin | |
| 1 can fat free refried beans, vegetarian | |
| ¼ cup diced green chilies | Washed and diced |
| 4 green onions | Washed, trimmed, and chopped |
| ½ cup shredded low fat Monterey Jack cheese | For vegan: use vegan cheese |
| ½ cup sliced ripe olives |

| 1 | Preheat oven to 450 degrees. | |
| 2 | Place 8 tortillas on baking sheet. | |
| 3 | Sprinkle with cheddar cheese evenly over tortillas; top with remaining tortillas. Brush lightly with oil. Bake for 4 minutes. | |
| 4 | Combine pizza sauce and cumin in a small bowl. Spread on tortillas. | |
