Vegetarian Lettuce Wraps

Portion Size: 2 lettuce wraps 

Ingredients: Yields: 8 servings

Ingredients Notes: 
1 lb. Imitation ground meat, crumbles(textured vegetable protein)
2 Tablespoons light soy sauce
2 teaspoons garlic powder
1 teaspoon ground ginger
1 cups water
1 Tablespoon cornstarch
16 lettuce leavesWashed
1 cup shredded carrotsWashed, peeled and shredded
1 cup green onionsWashed, trimmed, and thinly sliced
1 cup sliced red bell pepperWashed, seeded, and sliced
¼ cup chopped peanuts
2 Tablespoons fresh chopped cilantroWashed and chopped
Sauce:
2/3 cup light soy sauce
2/3 cup water
¼ cup lemon juice
2 teaspoons garlic powder
1 teaspoon ground ginger
2 teaspoons sugar

1In a large pan mix together imitation ground beef, 2 Tablespoons soy sauce, 1 teaspoon garlic powder and 1 teaspoon ginger.
2Heat on medium high heat to a slow boil.
3Reduce heat and simmer 5 minutes.
4Arrange lettuce leaves, carrots, scallions and red peppers onto a serving plate.
5In a medium mixing bowl mix together 2/3 cup soy sauce, 2/3 cup water, lemon juice 2 teaspoons garlic powder, 1 teaspoon ground ginger and sugar.  
6Divide into 8 small dipping bowls.
7Divide meat into 16 serving and place in a lettuce leaf.  
8Spoon  2 T. meat sauce into leaves and a few vegetables. Top with peanuts and cilantro.
9Roll up and dip in dipping sauce or spoon sauce over.
