Vegetarian Lettuce Wraps

2 teaspoons garlic powder | |
1 teaspoon ground ginger | |
1 cups water | |
1 Tablespoon cornstarch | |
16 lettuce leaves | Washed |
1 cup shredded carrots | Washed, peeled and shredded |
1 cup green onions | Washed, trimmed, and thinly sliced |
1 cup sliced red bell pepper | Washed, seeded, and sliced |
¼ cup chopped peanuts | |
2 Tablespoons fresh chopped cilantro | Washed and chopped |

2/3 cup light soy sauce | |
2/3 cup water | |
¼ cup lemon juice | |
2 teaspoons garlic powder | |
1 teaspoon ground ginger | |
2 teaspoons sugar |

1 | In a large pan mix together imitation ground beef, 2 Tablespoons soy sauce, 1 teaspoon garlic powder and 1 teaspoon ginger. | |
2 | Heat on medium high heat to a slow boil. | |
3 | Reduce heat and simmer 5 minutes. | |
4 | Arrange lettuce leaves, carrots, scallions and red peppers onto a serving plate. | |
5 | In a medium mixing bowl mix together 2/3 cup soy sauce, 2/3 cup water, lemon juice 2 teaspoons garlic powder, 1 teaspoon ground ginger and sugar. | |
6 | Divide into 8 small dipping bowls. | |
7 | Divide meat into 16 serving and place in a lettuce leaf. | |
8 | Spoon 2 T. meat sauce into leaves and a few vegetables. Top with peanuts and cilantro. | |
9 | Roll up and dip in dipping sauce or spoon sauce over. |
