Turkey and White Bean Soup or Chicken and White Bean Soup

Portion Size: 1 ½ cup

Ingredients: Yields: 8 servings

IngredientsNotes:
2 T. oil 
1 onionWashed, peeled and diced
1 Tablespoon flour 
1 Tablespoon dried basil 
1 t. garlic powder 
½ t. ground oregano 
2 lbs. lean ground turkey ( or chicken) 
1 (14.5 ounce) can diced tomatoesUse no added salt variety
6 cups low sodium chicken broth 
2 (15oz). can white beansNot drained.
1 (14 oz.) package fresh spinachWashed, trimmed and chopped.

Directions:

Steps:  
1In large stockpot, brown ground turkey and onions in oil. 
2Drain.    
3Add flour, basil, garlic powder and oregano. Stir.  
4Add tomatoes, chicken broth and beans.  Bring to a boil.  
5Reduce heat.  Stir in spinach and simmer 5 minutes uncovered. Serve hot.Serves 8.

To make this recipe gluten free: Use GF broth and GF flour. Always check all ingredients to be sure they are gluten free.
