Cheese Sausage Quiche

Portion Size: 1 slice (1/8 of pie or ¾ cup)

Ingredients: Yields: 8 servings

1 pastry shell (8 inch)unbaked
2 pounds lean pork or turkey sausage
1 green pepperWashed, trimmed and chopped
2 cups low fat cheddar cheeseshredded
3 eggs 
2 Tablespoon all-purpose flour
1 Tablespoon parsley flakes
1/2 teaspoon salt
1/4 teaspoon garlic salt
1/4 teaspoon black pepper
2 cups fat free evaporated milk
For gluten free (GF): Use GF all-purpose flour, GF pie crust, and GF sausage.  Always check each ingredient to be sure it is gluten free.

1Preheat oven to 425 degrees.
2Prepare pastry shell. Bake 7 minutes; remove from oven. Reduce heat to 350 degrees.
3In a medium skillet, brown sausage. Reserve 2 tablespoons fat; drain off remaining fat.
4Saute onion and green pepper in reserved fat until crisp tender, about 2 minutes. Stir in drained sausage.
5Spoon into partially baked shell; sprinkle with cheese.
6In a medium sized bowl, beat eggs until well blended.
7Add remaining ingredients; mix well. Pour over cheese.
8Bake at 350 degrees for 30-35 minutes. Cool for 5 to 10 minutes; cut into wedges to serve.Bake until knife inserted comes out clean. Cook until internal temperature reaches 165 F.
