Chicken with Cranberry Apple Sauce (meatless)

| ½ teaspoon black pepper | |
| ¼ cup oil | |
| 1 cup apple cider or juice | |
| 1 cup cranberry sauce | May use canned. |
| ¼ cup honey | |
| ½ cup orange juice concentrate, thawed | |
| 1 teaspoon ground ginger |

| 1 | In a large nonstick skillet, heat oil over medium high heat. | |
| 2 | Season chicken with salt and pepper. Cook until lightly brown. Add apple cider. Cover and simmer for 8 minutes. | |
