Chicken with Lime Sauce (meatless)
Portion Size: 3 oz. chicken and 2 T. sauce

| 2 ½ lbs. meatless chicken | |
| 2 tablespoons cooking oil | |
| ½ cup lime juice | Fresh lime juice works best. |
| 1 cup apple juice | |
| 1 tablespoon cornstarch | |
| 2 teaspoons low sodium veganchicken bouillon cubes or granules | |
| 1 lime | Washed and sliced (optional). |

| 1 | Spray a large skillet with nonstick spray. Heat oil in skillet. | |
| 2 | Add chicken and cook over medium heat for 2 to 3 minutes. | Cook until internal temperature of chicken reaches 165 degrees F. |
| 3 | In mixing bowl combine lime juice, apple juice, cornstarch and bouillon. Add sauce to skillet and cook, stirring constantly. Cook until thick. | |
