Salmon and Peas Pasta Salad
Portion Size: 1 cup

| 1 lb. pasta | May use whole grain pasta |
| 4 cups canned salmon | water packed, drained, flaked |
| 1 cup frozen peas, thawed | |
| 1/4 cup olive oil | |
| 2 garlic cloves, minced | Washed, peeled and minced |
| 1/2 cup fresh lemon juice | |
| 1 teaspoon lemon zest | |
| 1/2 teaspoon salt | |
| 1/4 teaspoon pepper | |
| 1/4 cup Parmesan Cheese |

| 1 | Bring a pot of water to a boil. Cook pasta until al dente, about 9 minutes, or as package directs | Reserve 1 cup of cooking water; drain pasta |
| 2 | In a large bowl add garlic and salmon. Flake salmon. | |
| 3 | Add lemon juice, lemon zest, salt, olive oil and pepper. | |
| 4 | Toss to coat. Add pasta and peas. Gently toss. Chill. | |
| 5 | Top with Parmesan cheese just before serving | |
| 6 | Serve chilled |
