Tuna Muffin Melt

Portion Size: 3 oz. 

Ingredients: Yields: 8 servings

Ingredients Notes: 
4 cups tuna (drained water packed)
1/2 cup light mayonnaise
2 tablespoons Dijon mustard
1 8 oz. light cream cheesesoftened
1/2 cup celery, dicedWash, trim and dice
8 green onionsWash, trim and slice with green tops
8 oz. low fat shredded cheddar cheese
8 English Muffins

1In a medium sized bowl, combine tuna  mayonnaise, cream cheese, Dijon mustard, and celery
2Spilt muffins in half. Top with tuna salad. Spread and flatten.
3Top with cheddar cheese and green onions  Bake in a 400 degree oven 10 to 12 minutes  Cook until internal temperature reaches 165° F for 15 seconds.
