Herb Roasted Yukon Gold Potatoes

3 lbs. Yukon Gold Potatoes
1/4 Cup olive oil
3T. Chopped Chives
1 t. Garlic powder
2 t. paprika
Salt and pepper
Wash and scrub potatoes. Cut potatoes into even sized chunks. Spread in a single later in a flat ovenproof dish. Pour over olive oil. Season with chives, garlic powder and paprika. Stir them until coated. Bake at 400 degrees about 30 to 40 minutes. Remove and toss to coat. Return and bake 10-15 minutes until tender. Serves 8.
