Spanish Rice

4 Slices bacon, minced
2 Cups rice

1 Cup thinly slice onion
2 Cups canned tomatoes
1 Teaspoon salt
1 Teaspoon paprika
1 Seeded and minced green pepper
1 Pressed clove garlic

Sauté bacon until crisp. Remove the bacon. In the dripping, stir in rice and onions cook until golden brown. Add the bacon, tomatoes, salt, paprika, green pepper, and garlic. Steam the rice in a double boiler about 1 hour. Stir it frequently. Add water or stock if the rice become too dry. Serves 8.
