Baked Winter Squash

Portion Size: ½ cup squash 

Ingredients: Yields: 8 servings

Ingredients Notes: 
4 pounds winter squashMay use Acorn or butternut squash, Washed, cut in half and seeds removed. 
1 tablespoon olive oil or canola oil 
salt and pepper, to taste


Steps:Directions: Critical Control Point /Quality Assurance
1Preheat the oven to 400°F.
2Spilt the squash and remove the seeds.
3Sprinkle the cut sides with salt.
4Place cut side down in a baking dish and bake for about 40-50 minutes or until squash is easily pierced with a fork.
5Turn and make indentations with fork across the cut side of the squash.
6Spread with oil. Return to the oven for a minute or two.Cook until internal temperature reaches 135°F.

Variations: Winter Squash can be steamed, braised, microwaved, roasted, stir fry, boiled and mashed. May add choice of herbs or spices for flavor.
