Beef Tenderloin Medallions

| 2 lbs. boneless beef tenderloin | Trim all visible fat, Thinly slice into thin slices across the grain. |
| 1/4 cup olive oil | Or vegetable oil |
| 1 teaspoon garlic salt | |
| 1 teaspoon pepper | |
| Optional additional herbs to rub: dried thyme, minced rosemary, fresh minced garlic. |

| 1 | Season Meat with garlic salt and pepper | |
| 2 | Heat oil to medium high heat. | |
| 3 | Add beef slices | |
| 4 | Cook for 2 minutes until slightly brown | |
| 5 | Turn slices and cook until brown | Heat to at least 145 degree with 4 minute rest |
| 6 | Serve immediately. |
