Black Beans

Portion Size: ½ cup

Ingredients: Yields: 8 servings

Ingredients Notes: 
2 (16 oz.) can low sodium black beansDrained and rinsed
1 medium onion Washed and chopped 
2 large carrotsWashed, peeled and diced
1 clove garlicWashed and chopped. 
1 tablespoon cilantro
¼ teaspoon cayenne pepper
½ teaspoon salt Optional

1In a medium saucepan, combine beans, onion, carrots and garlic and bring to a boil. 
2Reduce heat to medium-low.
3Season with cilantro, cayenne pepper and salt. 
4Simmer for 5 minutes and serve. Internal temperature 135 F.
