Blue Cheese Chicken
Portion Size: 4 oz. (3 oz. meat plus 1 oz. breading)

| 8 Boneless, skinless chicken breast halves | |
| 1/2 cup blue cheese salad dressing | See recipe in cookbook for blue cheese dressing or use light blue cheese. |
| 1 cup Italian seasoned breadcrumbs | |
| 1/2 cup Nonfat milk |

| 1 | Preheat oven to 375 degrees. | |
| 2 | Pour blue cheese dressing into a flat bowl. Thin with a little water or milk if dressing is very thick. | |
| 3 | Place breadcrumbs in a second bowl. | |
| 4 | Dip chicken breast in dressing. Drain excess. | |
| 5 | Then dip in breadcrumbs, thoroughly covering chicken. | |
| 6 | Bake in oven on a cookie sheet or shallow pan for 30 minutes or until fork tender. | Cook until internal temperature reaches 165 degrees F. |
