Brussels Sprouts with Apples

Portion Size: ½ cup Brussels sprouts mixture  Yields: 8 servings

Ingredients Notes: 
4 cups Brussels sproutsWashed, trimmed and cut in half
2 apples, cored and dicedWashed, unpeeled and diced
½ cup low fat Balsamic vinaigrette dressing
2 tablespoon unsalted sliced almondsOptional
1 teaspoon thymeFinely chopped
1 teaspoon salt
¼ teaspoon pepper

1Wash, trim and cut Brussels sprouts in half.
2Place Brussels sprouts in microwave dish and cover.
3Add 2 Tablespoons of water. 
4Steam in microwave until tender, about 7 minutes.Cook until internal temperature reaches 135°F.
5In a medium sided bowl, combine apples, almonds, thyme and dressing. Toss to coat and serve warm.

Variations: Brussels sprouts can be steamed, braised, microwaved, roasted, stir fry. May add choice of herbs or spices for flavor.
