Brussels Sprouts with Apples
Portion Size: ½ cup Brussels sprouts mixture Yields: 8 servings

| 4 cups Brussels sprouts | Washed, trimmed and cut in half |
| 2 apples, cored and diced | Washed, unpeeled and diced |
| ½ cup low fat Balsamic vinaigrette dressing | |
| 2 tablespoon unsalted sliced almonds | Optional |
| 1 teaspoon thyme | Finely chopped |
| 1 teaspoon salt | |
| ¼ teaspoon pepper |

| 1 | Wash, trim and cut Brussels sprouts in half. | |
| 2 | Place Brussels sprouts in microwave dish and cover. | |
| 3 | Add 2 Tablespoons of water. | |
| 4 | Steam in microwave until tender, about 7 minutes. | Cook until internal temperature reaches 135°F. |
| 5 | In a medium sided bowl, combine apples, almonds, thyme and dressing. Toss to coat and serve warm. |
Variations: Brussels sprouts can be steamed, braised, microwaved, roasted, stir fry. May add choice of herbs or spices for flavor.
