Canadian Bacon Casserole

Portion Size: 3/4 Cup

Ingredients: Yields: 8 servings

Ingredients Notes: 
3 cups Egg Substitute
1 cup shredded reduced fat Cheddar Cheese
8 oz. Canadian Bacon, diced
1 can (12 oz.) fat free evaporated milk
1 teaspoon garlic powder
1/2 cup chopped green onionsWash, trim and slice thin (including green tops)
4 cups cubed bread (3/4 inch cubes)May use whole grain bread
1 red pepper, dicedWash, trim and dice
1 onion, dicedWash, peel and dice
1/2 teaspoon salt
1/4 teaspoon ground black pepper
For gluten free (GF): Use GF cubed bread. Check all ingredients to ensure they are gluten free.

1Preheat oven to 350°F. Spray a baking dish with cooking spray; set aside
2Combine Egg substitute, milk and garlic powder in large bowl
3Add bread, Canadian bacon, peppers, cheese and green onions; toss to coat
4Place bread mixture in prepared dish; lightly press bread down into Egg Beaters mixture
5Bake 35 to 45 minutes or until knife inserted in center comes out cleanCook until internal  end temperature is 160 ° degrees F.
6Let cool 5 minutes and cut into 8 pieces to serve
