Chicken and Pasta with Sun Dried Tomatoes

1 lb. package pasta | May use whole grain pasta |
1/2 cup sun dried tomatoes, chopped | |
4 cups fresh baby spinach | Wash and trim |
1/2 cup Parmesan Cheese |

1 | Prepare pasta according to package directions; drain and set aside. | |
2 | Sauté chicken in oil in a large skillet over medium-high heat for about 15 minutes, turning occasionally until lightly browned. | Cook until internal temperature reaches 165 degrees F. |
3 | Add sun dried tomatoes and spinach. Stir gently until spinach wilts. Remove from heat, stir in Parmesan cheese. | |
4 | Add pasta to sauce and toss. |
