Chicken Gnocchi with Sun Dried Tomatoes

Portion Size: 1 cup

Ingredients: Yields: 8 servings

Ingredients Notes: 
2 (1 pound) low fat chicken sausage Cut into 1/2-inch slices
1-pound package gnocchi
1/2 cup sun dried tomatoes or 1 c. fresh tomatoesWashed, trimmed and chopped
4 cups baby spinachWashed, trimmed and chopped
1/2 cup Parmesan cheese
For gluten free (GF): use GF chicken sausage, GF gnocchi or GF pasta. Always check each ingredients to be sure it is gluten free.

1Prepare Gnocchi according to package directions; drain and set aside.
2Sauté chicken sausage in oil in a large skillet over medium-high heat for 15 minutes, turning occasionally until lightly browned and temperature reaches 165 degrees F.
3Add sun dried tomatoes and spinach. 
4Stir gently until spinach wilts.
5Remove from heat, stir in Parmesan cheese.
6Add gnocchi to sauce and toss.
