Chicken Goulash
Portion Size: 1 cup (1/2 cup pasta ½ cup meat mixture)

| 2 1/2 Pounds boneless skinless chicken breasts or thighs | Trim all visible fat. Cut into ½ inch pieces. |
| 1 teaspoon salt | |
| 1/4 teaspoon black pepper. | |
| 2 Tablespoon oil | |
| 1 cup onion, chopped | Wash, peel and dice. |
| 1 cup green bell pepper | Wash, trim and slice. |
| 1 cup tomato sauce | |
| 1 cup reduced sodium chicken broth | |
| 1 tablespoon paprika | |
| 1 cup light sour cream | |
| 1 lb. pasta | Tip: use whole grain pasta |

| 1 | Melt 1 tablespoon oil in a large skillet over medium high heat. . | |
| 2 | Lightly brown chicken on all sides | |
| 3 | Add onions and sauté until transparent. | |
| 4 | Add tomato sauce, broth, green pepper, salt, flour and paprika. | |
| 5 | Cover the pot and simmer the meat for 30 minutes. Stir in sour cream just before serving. | Temperature check. Minimum Temperature 165°F for 15 seconds |
| 6 | Prepare pasta according to directions on package. | |
| 7 | Serve pasta topped with meat mixture. Serve hot. |
