Chicken Salad Sandwiches

| 1/2 cup celery, diced | Wash, trim and dice |
| 1/2 cup light mayonnaise | |
| 1 tablespoon parsley, dried | |
| 1 tablespoon onion | Wash, peel and dice. |
| 16 slices bread | Optional: use whole wheat or French bread |
| 8 lettuce leaves | Wash and trim |
| 16 tomato slices | Wash, trim and slice |
