Chicken Salad with Almonds

Portion Size: 1/3 cup

Ingredients: Yields: 8 servings

Ingredients Notes: 
3 cups bite size pieces cooked boneless skinless chicken
1/2 cup diced celeryWashed, trimmed and diced
1/2 cup sliced unsalted almonds
1 tablespoon grated onion Washed, peeled and grated
1/2 cup light mayonnaise
8 lettuce leavesWashed
2 Hard cooked eggs(optional) Sliced
This is a gluten free recipe. Always check each ingredient to be sure it is gluten free

1Mix the chicken and celery and add if you wish the grapes and or nuts.
2Mix the onion and mayonnaise.  
3Refrigerate for several hours.  
4Serve on a lettuce leaf and garnish with slice eggs.
