Chicken Salad with Almonds

3 cups bite size pieces cooked boneless skinless chicken | |
1/2 cup diced celery | Washed, trimmed and diced |
1/2 cup sliced unsalted almonds | |
1 tablespoon grated onion | Washed, peeled and grated |
1/2 cup light mayonnaise | |
8 lettuce leaves | Washed |
2 Hard cooked eggs | (optional) Sliced |

1 | Mix the chicken and celery and add if you wish the grapes and or nuts. | |
2 | Mix the onion and mayonnaise. | |
3 | Refrigerate for several hours. | |
