Chicken with Cranberry Apple Sauce

1 teaspoon salt | |
½ teaspoon black pepper | |
¼ cup oil | |
1 cup apple cider or juice | |
1 cup cranberry sauce | May use canned. |
¼ cup honey | |
½ cup orange juice concentrate, thawed | |
1 teaspoon ground ginger |

1 | In a large nonstick skillet, heat oil over medium high heat. | |
2 | Season chicken with salt and pepper. Cook until lightly brown. Add apple cider. Cover and simmer for 8 minutes. | Cook to 165° F for 15 seconds for chicken |
3 | In a food processor, combine cranberry sauce, honey, orange juice concentrate and ginger. Puree sauce. Pour sauce over chicken. Cook for 1-2 minutes until heated through |
