Chicken Thighs with Apple Raison Sauce

Portion Size: 3 oz. boneless

Ingredients: Yields: 8 servings

Ingredients Notes: 
2 ½ pounds boneless skinless chicken breasts or thighsTrim all visible fat. 
1 teaspoon salt
½ teaspoon black pepper
¼ cup oil
4 cups apple cider or juice
½ cup coarse grain mustard
6 large applesWash. Core and dice to ½ inch thickness
1 cup raisons
½ cup sliced green onions
¼ cup cornstarch
½ cup water

1In a large nonstick skillet, heat oil over medium high heat.
2Brown chicken and season with salt and pepper.
3In a blender combine apples, raisin, cornstarch apple cider and mustard; pour over chicken. 
4Cover and simmer for 8 minutes
5Reduce heat to low, cover and cook 5-10 minutes
6To ensure doneness check with meat thermometer. Cook to 165 ° F for 15 seconds. 
7Top with green onion. Serve immediately
