Chicken with Cranberry Apple Sauce

Portion Size: 3 oz. boneless, 5 oz. with bone

2 ½ pounds boneless skin less chicken breasts or thighsTrim all visible fat
1 teaspoon salt
½ teaspoon black pepper
¼ cup oil
1 cup apple cider or juice
1 cup cranberry sauceMay use canned.
¼ cup honey
½ cup orange juice concentrate, thawed
1 teaspoon ground ginger
For gluten free (GF): Use GF cranberry sauce. Always check each ingredient to be sure it is gluten free.

1In a large nonstick skillet, heat oil over medium high heat.
2Season chicken with salt and pepper. Cook until lightly brown. Add apple cider. Cover and simmer for 8 minutes.Cook to 165° F for 15 seconds for chicken
3In a food processor, combine cranberry sauce, honey, orange juice concentrate and ginger. Puree sauce. Pour sauce over chicken. Cook for 1-2 minutes until heated through
