Collard Greens with Bacon

Portion Size: ½ cup collard greens Yields: 8 servings

Ingredients Notes: 
1 tablespoon olive oil
3 slices baconOptional
1 large onionWashed, peeled and chopped
2 cloves garlicWashed, peeled and minced
1 teaspoon salt
1 teaspoon pepper
3 cups low sodium chicken broth
1½ pounds fresh collard greens, Washed, trimmed, tough stems and membranes removed, and cut into 2-inch pieces

1Heat oil in a large pot over medium-high heat.
2Add bacon, and cook until crisp. Remove bacon from pan, crumble and return to the pan.Cook until internal temperature reaches 145°F for 15 seconds.
3Add onion, and cook until tender, about 5 minutes.
4Add garlic, and cook until just fragrant.
5Add collard greens, and fry until they start to wilt.
6Pour in chicken broth, and season with salt, pepper, and red pepper flakes.
7Reduce heat to low, cover, and simmer for 45 minutes, or until greens are tender.Cook until internal temperature reaches 135°F.
