Corn Beef Hash

Portion Size: 1 cup

Ingredients: Yields: 8 servings

Ingredients Notes: 
2 tablespoons oil
2 onions, dicedWash, peel and dice
4 large potatoesWashed, peeled and chopped
2 (12 ounce) cans corned beef
¼ teaspoon black pepper
5 tablespoons cider vinegar
For gluten free (GF): Use GF corned beef. Check all ingredients to be sure they are gluten free.

1Heat the oil in a large skillet over medium high heat.
2Sauté the onions and potatoes until slightly browned, and stir in corned beef.
3Season the hash with pepper and vinegar.
4Partially cover skillet, reduce heat to medium low and cook stirring occasionally.
5Cook the hash for about 20 minutes or until potatoes are tender.
