Cranberry Molded Salad

Portion Size: 1/2 cup

Ingredients: Yields: 8 servings

Ingredients Notes: 
2 envelopes plain gelatin
3/4 cup sugar
1 tablespoon lemon juiceWashed, zest and juiced
Juice of 1 orangeWashed, zest and juiced 
1 cup raw ground cranberriesWashed and ground.  
Zest of 1 orange
1 teaspoon zest lemon 
1/2 cup crushed pineappleUse juice packed canned. 
1 cup chopped celeryWashed, trimmed and chopped
 
This is a gluten free recipe. Always check each ingredient to be sure it is gluten free.

1Dissolve the gelatin in 1/2 cup hot water.
2Add pineapple, sugar, lemon, and orange juices.
3Chill until thickened.
4Stir in the remaining ingredients, and pour into a ring or other mold.
