Cranberry Orange Molded Salad

Portion Size: 1/2 cup 

Ingredients: Yields: 8 servings

Ingredients Notes: 
2 cups cranberry juice cocktail
2 packages orange flavored gelatin
1 cup orange juice
4 orangesWashed, peeled and sectioned. Seeds and tough membranes removed or may use mandarin oranges
1 cup un salted walnutsCoarsely chopped 


Steps:Directions: Critical Control Point /Quality Assurance
1Heat cranberry juice and pour over the gelatin, which has been softened with 1/4 cup water.
2Chill until syrupy, about 45 minutes.
3Pour half the gelatin into a mold. Let refrigerate 30 minutes.
4Add orange juice and sections, walnuts and remaining gelatin. Chill until firm.
5To unmold, run a knife around the edge, invert over a plate, and hold a hot cloth over the mold for a few moments.
