Creamy Cauliflower Salad

Portion Size: 1/2 cup

Ingredients: Yields: 8 servings

Ingredients Notes: 
4 cups cauliflowerWash and separate 1 head of cauliflower into florets, and coarsely chop.
4 green onionsWashed, trimmed and sliced. (including greens)
2 celery ribsWashed, trimmed and diced.
1 cup shredded lowfat  cheddar cheese
1 cup light ranch dressing(see recipe in cookbook)
3 Tablespoons chopped fresh parsleyWashed and chopped.
Cooked and crumbled bacon(optional)

1Separate 1 head of cauliflower into florets, and coarsely chop.
2Combine florets, green onions, and next four ingredients.
3Toss with bacon. Chill until ready to serve.
