Cucumber Salad

Portion Size: 1/2 cup

Ingredients: Yields: 8 servings

Ingredients Notes: 
1/4 cup vinegar or lemon juice
1 tablespoon olive oil
2 tablespoons sugar
1/2 teaspoon celery seed(optional)
4 medium cucumbersWashed, halved lengthwise, and thinly sliced
1 small onionPeeled, washed, thinly sliced, and separated into rings
1 teaspoon salt 
Dash of pepper

1Stir together vinegar, sugar, oil, celery seed if desired, salt and pepper.
2Add cucumber, and onion slices and toss to coat.  
3Cover and chill. Stir before serving.
