Florentine Ham Casserole

2 lbs. cooked ham, slices | |
2 (10 oz.) package chopped spinach, thawed | May substitute fresh spinach for frozen, Washed trimmed and chopped. |
12 oz. package mushrooms | Wash and slice |
½ cup onion, chopped | Wash, peel and slice |
1 teaspoon garlic powder | Or substitute 2 cloves minced |
½ cup butter or margarine | |
¼ cup all-purpose flour | |
2 cups Nonfat milk | |
4 eggs beaten | |
½ teaspoon ground oregano | |
1 teaspoon basil | |
¼ teaspoon black pepper | |
1 cup lowfat mozzarella cheese, shredded |

1 | Pre heat oven to 350°F. | |
2 | In a large saucepan cook mushroom, onion and garlic in margarine or butter, cook until tender but not brown. | |
3 | Stir in flour and milk. | |
4 | Cook and stir over medium low heat 4-5 minutes or until thickened and bubbly. | |
5 | Remove from heat and stir in oregano, pepper, basil, spinach and eggs. | |
6 | Arrange ham slices on bottom of baking dish. Top with spinach mixture and then cheese. | |
7 | Bake for 40 minutes or until internal temperature reaches 160°F. Let stand for about 10 minutes. |
