German Hot Potato Salad

| 8 medium potatoes | Washed, peeled and sliced |
| 4 strips bacon | Diced |
| ¼ cup onion | Washed, peeled and chopped |
| ¼ cup celery | Washed, trimmed and chopped |
| 1 dill pickle | Chopped |
| ¼ cup water | |
| ½ cup vinegar | |
| ½ teaspoon salt | |
| ½ teaspoon sugar | |
| 1/8 teaspoon paprika | |
| ¼ teaspoon dry mustard |

| 1 | Place potatoes in a saucepan. Cover with water. | |
| 2 | Bring to boil. Reduce heat and cook until tender. | |
| 3 | Remove from heat and drain. Let cool and peel. | |
| 4 | In a large skillet sauté the bacon. | |
| 5 | Add onion and celery and sauté. Add dill pickle and cook for 1 minute. Add potatoes, water, vinegar, sugar, salt, paprika and mustard. Stir gently. | Cook until internal temperature reaches 165°F. |
| 6 | Heat through. Serve hot or cold. |
