Hash Brown Potatoes

8 medium potatoes | Washed, peeled and finely diced raw. |
3 tablespoons oil | |
1 teaspoon onion | Washed and grated. (optional) |
½ teaspoon salt | |
½ teaspoon pepper |

1 | Wash and scrub potatoes. Peel potatoes and finely dice. | |
2 | In a large skillet heat oil. Spread the potato mixture over the oil. | |
3 | Press it with a broad knife into a cake. Sauté the potatoes slowly, shaking them from time to time to keep them from sticking. | |
4 | When the bottom is brown, cut the potato layer in half and turn each half with two spatulas. | |
5 | Brown the second side and serve the potatoes piping hot. | Internal temperature 135 F. |
