Jicama Salad With Cumin

Portion Size: 1/2 cup

Ingredients: Yields: 8 servings

Ingredients Notes: 
1-2 large jicama root (4 cups)Washed, peeled, and sliced into thick matchsticks
1 teaspoon salt
2 teaspoons sugar
2 limesWashed and Juiced
2 Tablespoons chopped cilantro leavesWashed, trimmed  and chopped
1/2 teaspoon ground cumin
2 tablespoons olive oil
¼ teaspoon ground black pepper

1Place jicama in a large bowl, sprinkle with salt, and add the juice of 1 lime.
2Let jicama stand 15 minutes.
3Whisk sugar, lime juice, cilantro, cumin and pepper in small bowl.  
4Pour dressing over salad and season with pepper.
