Mashed Sweet Potatoes

Portion Size: ½ cup

Ingredients:     Yields: 8 servings

8 medium sweet potatoesWashed, peeled and cut up. 
½ teaspoon salt 
½ cup nonfat milk 
3 tablespoons margarine 
¼ teaspoon pepper

1Wash and pare sweet potatoes. Cut into six sections. 
2In a medium saucepan, cover with water and cook over medium heat for 20 to 25 minutes or until the potatoes are tender when pierced with a fork. Drain potatoes in a colander. 
3Return the sweet potatoes to the saucepan and with potato masher mash until no lumps remain. 
4Add salt, milk, pepper and margarine. Mash until light and fluffy.
