Meatballs with Cheese Sauce
Portion Size: 4 oz. meatballs and 2 T. sauce

2 1/2 pounds lean ground beef | |
1/2 cup bread crumbs | |
1/4 cup minced onion | |
2 egg, slightly beaten | |
1/4 teaspoon salt | |
2 1/2 cups nonfat milk | |
2 tablespoons cornstarch | |
2 cups low fat shredded cheese | |
1 teaspoon garlic powder | |
3 teaspoons parsley |

1 | Mix, beef, bread crumbs, onions, salt, and eggs. | |
2 | Shape into meatballs. | |
3 | Brown meatballs in skillet. | Cook until internal temperature reaches 165 F degrees for 15 seconds |
4 | Pour off drippings. | |
5 | In a small bowl combine cornstarch with 1/2 cup milk. | |
6 | In a small sauce pan heat 2 cups milk and cheese until just starts to boil. | |
7 | Stir in garlic powder and cornstarch mixture. | |
8 | Cover and cook over low heat for 10 minutes. | |
9 | Pour sauce over meatballs just before serving. | |
10 | Top with parsley. |
