Meatballs with Cheese Sauce

Portion Size: 4 oz. meatballs and 2 T. sauce

Ingredients: Yields: 8 servings

Ingredients Notes: 
2 1/2 pounds lean ground beef 
1/2 cup bread crumbs
1/4 cup minced onion 
2 egg, slightly beaten 
1/4 teaspoon salt 
2 1/2 cups nonfat milk
2 tablespoons cornstarch 
2 cups low fat shredded cheese 
1 teaspoon garlic powder 
3 teaspoons parsley 
For gluten free (GF): Use GF bread crumbs. Always check each ingredient to be sure it is gluten free.

1Mix, beef, bread crumbs, onions, salt, and eggs.
2Shape into meatballs.
3Brown meatballs in skillet.Cook until internal temperature reaches 165 F degrees for 15 seconds
4Pour off drippings.
5In a small bowl combine cornstarch with 1/2 cup milk. 
6In a small sauce pan heat 2 cups milk and cheese until just starts to boil.
7Stir in garlic powder and cornstarch mixture.
8Cover and cook over low heat for 10 minutes.
9Pour sauce over meatballs just before serving.
10Top with parsley.
