Oven Baked Breaded Chicken

Portion Size: 6 oz. chicken with bones and sauce or 4 oz. boneless with sauce

Ingredients: Yields: 8 servings

Ingredients Notes: 
2 ½ pounds chicken, boneless skin less chicken thighs or breasts
2 cups Italian breadcrumbs
1 cup light mayonnaise
2 tablespoons lemon juice
1 teaspoon paprika
½ cup nonfat milk
For gluten free (GF): Use GF bread crumbs. Always check each ingredient to be sure it is gluten free

1Pre heat oven at 350 degrees F. 
2Dry chicken pieces.  Combine mayonnaise, lemon juice, and milk in a deep dish; Combine paprika and breadcrumbs in a separate deep dish.
3Place chicken pieces in mayonnaise mixture one at a time and toss to coat. Coat with breadcrumbs and place on baking sheet. 
4Bake for 30-40 minutes Cook until chicken internal temperature reaches 165 degrees F.
