Pork Chop O Brien
Portion Size: 3 oz. boneless, plus 1/2 cup potatoes

8 boneless pork chops, ½ inch thick | Trim all visible fat |
1 teaspoon salt and ¼ teaspoon pepper | |
1 teaspoon poultry seasoning | |
1 cup celery | Wash, trim and dice. |
½ cup nonfat milk | |
½ cup light sour cream | |
1 large bag (24 oz) Frozen O Brien or Hash brown potatoes | thawed |
1 cup lowfat cheddar cheese | |
1 can French Fried onion | (Optional) |

1 | Season chops with salt and pepper. | |
2 | Heat oil in large skillet over medium high heat. Brown chops, 7-8 minutes per side. | |
3 | Pre heat the oven to 350 °F. Spray a baking dish with nonstick cooking spray. | Cook until internal temperature reaches 145 °F for 15 seconds. |
4 | In a large bowl, combine the poultry seasoning, celery, milk, sour cream, and stir in potatoes | |
5 | Transfer the chops mixture to casserole dish. | |
6 | Arrange the potatoes, on top of the chops mixture. Top with French Fried onions and cheddar cheese. Bake until the potatoes mixture is hot and the chops are cooked to 165°F. Bake 35 to 40 minutes. Serve hot. | Cook until internal temperature reaches 165 °F for 15 seconds. |
