Pork Chop with Apple Curry Sauce

Portion Size: 3 oz. boneless, 5 oz. with bone

8 boneless pork chops, ½ inch thickTrim all visible fat
1 teaspoon salt 
½ teaspoon black pepper 
¼ cup oil 
1 ½ cup apple cider or juice 
1 cup chicken broth, reduced salt 
1 Tablespoon cornstarch 
2 Tablespoons water 
1 teaspoon ground ginger 
1 teaspoon ground curry 
For gluten free (GF): Use GF chicken broth.  Always check each ingredient to be sure it is gluten free.

1In a large nonstick skillet, heat oil over medium high heat. 
2Brown chops and season with salt and pepper.Cook to 145° F for 15 seconds
3Add apple cider, ginger and curry and broth. Cover and simmer for 8 minutes. 
4In a small bowl combine cornstarch and water Add cornstarch mixture to chops and bring to boil. Cook until sauce thickens. Serve hot.
