Red Potato Salad with Dijon Mustard (Warm)

Ingredients: Yields: 8 servings

| 8 medium red potatoes | Washed, peeled and sliced |
| ¼ cup green onion | Washed, trimmed and chopped. (including green tops) |
| ½ cup course grain Dijon mustard | |
| ½ teaspoon salt | |
| 1/4 teaspoon black pepper | |
| 3 tablespoons olive oil |

| 1 | Place potatoes in a saucepan. Cover with water. | |
| 2 | Bring to boil. Reduce heat and cook until tender. | Cook until internal temperature reaches 165°F. |
| 3 | Remove from heat and drain. | |
| 4 | Add salt, pepper, Dijon mustard and olive oil. | |
| 5 | Toss to coat. Garnish with green onions. Serve warm or chilled. |
