Red Potato Salad with Dijon Mustard (Warm)

Portion Size: ½ cup

Ingredients:     Yields: 8 servings

8 medium red potatoesWashed, peeled and sliced
¼ cup green onionWashed, trimmed and chopped. (including green tops)
½ cup course grain Dijon mustard 
½ teaspoon salt 
1/4 teaspoon black pepper 
3 tablespoons olive oil

1Place potatoes in a saucepan. Cover with water. 
2Bring to boil. Reduce heat and cook until tender.Cook until internal temperature reaches 165°F.
3Remove from heat and drain. 
4Add salt, pepper, Dijon mustard and olive oil. 
5Toss to coat.  Garnish with green onions. Serve warm or chilled.
