Reuben Sandwiches

Portion Size: 1 sandwich (2 slices bread, 2 oz. corned beef, 2 T. sauerkraut, 1 oz. Swiss Cheese, 1 T. dressing)

Ingredients Notes: 
16 Slices rye bread
1 pound thinly sliced lean corned beef
1 cup sauerkraut, drained
8 Slices Lowfat Swiss cheese
3/4 cup Reduced fat Russian or thousand island dressing
Margarine
For gluten free (GF): Use GF bread, GF corned beef and GF dressing. See recipe in salad dressing for GF salad dressing.
Check all ingredients to be sure they are gluten free.

1Preheat oven to 400 degree oven
2Lightly spread margarine on one side only of bread
3Layer corned beef, sauerkraut, and Swiss cheese. (Margarine needs to be on the outside of the bread)
4Spread thousand island dressing on cheese
5Wrap in foil and heat in oven until cheese is heated through
6You may also grill this sandwich under the broiler or brown in skillet
