Roasted Brussels Sprouts with Red Onion and Pine Nuts

1 large red onion, | Washed, peeled and thinly sliced |
1 tablespoon olive oil | |
¼ teaspoon salt | |
¼ teaspoon pepper | |
¼ cup unsalted pine nuts |

1 | Preheat oven to 425°F. | |
2 | In a large bowl toss Brussels sprouts, onion, olive oil, salt, and pepper. | |
3 | Arrange single layer on baking sheet. | |
4 | Roast until sprouts are well browned about 25 minutes. | Cook until internal temperature reaches 135°F. |
5 | Transfer to platter and sprinkle with pine nuts. |
