Roasted Brussels Sprouts with Red Onion and Pine Nuts

Portion Size: ½ cup Brussels sprouts

Ingredients: Yields: 8 servings

Ingredients Notes: 
4 cup fresh Brussels sprouts Washed, stems trimmed and halved lengthwise
1 large red onion, Washed, peeled and thinly sliced
1 tablespoon olive oil
¼ teaspoon salt
¼ teaspoon pepper
¼ cup unsalted pine nuts

1Preheat oven to 425°F.
2In a large bowl toss Brussels sprouts, onion, olive oil, salt, and pepper.
3Arrange single layer on baking sheet.  
4Roast until sprouts are well browned about 25 minutes.Cook until internal temperature reaches 135°F.
5Transfer to platter and sprinkle with pine nuts.
