Roasted Red Cherry Tomatoes

Portion Size: ½ cup tomatoes 

Ingredients: Yields: 8 servings

Ingredients Notes: 
4 – 6cups cherry tomatoesWashed, trimmed and sliced in half. (allow for shrinkage)
1 tablespoon olive oil
salt and ground black pepper

1Preheat oven to 400°F.
2Place the tomatoes on a sheet pan, drizzle over the olive oil and season with salt and pepper.
3Roast until the tomatoes collapse, about 10 minutes.Cook until internal temperature reaches 135°F.
