Southwestern Grilled Turkey and Cheese Sandwich With Chipotle Sauce

8 Slices American cheese (1 oz.) | May use other low-fat sliced cheese |
1 lb. sliced lean turkey | |
1 yellow bell pepper | Washed, trimmed and sliced |
1 red bell pepper | Washed, trimmed and sliced |
1 teaspoon olive oil | |
Chipotle Sauce: | |
½ cup light mayonnaise or nonfat plain Greek yogurt | |
1 tablespoon adobo sauce | |
¼ teaspoon garlic powder | |
¼ teaspoon paprika | |
1 teaspoon lemon or lime juice | |
16 Slices bread | Wheat or white |

1 | Pre-heat oven to 400-degree F. On a baking sheet, drizzle peppers with olive oil. Toss to coat. Roast for 15-20 minutes until tender. | |
2 | Combine mayonnaise or yogurt, adobo sauce, garlic powder, paprika, lemon or lime juice in a food processor. Blend until smooth. | |
3 | Put 1 slice of cheese and 2 oz. turkey between 2 slices of bread. Spread Chipotle sauce on inner slice of bread. Add some roasted peppers. Spread margarine on the outside of each slice of bread. Heat a large skillet, and place sandwich in skillet. | |
4 | Cook until golden brown and then turn until both sides are golden brown. Repeat until 8 sandwiches are made. |
