Spicy and Sweet Chicken Stir Fry
Portion Size: 1 ½ cups; (approx. ½ cup chicken with sauce, ¼ cup green beans ¼ cup pineapple, ½ cup rice )

1 (16 oz) can pineapple chunks in its own juice | |
1 tablespoon oil | |
1/2 teaspoon salt | |
1/4 teaspoon pepper | |
1/4 teaspoon crushed red pepper flakes or hot pepper sauce | (optional) |
2 cups frozen string beans | |
1 1/2 cups prepared sweet and sour sauce | |
4 cups hot cooked brown rice |

1 | Drain pineapple, reserving 1/2 cup juice. | |
2 | In a large skillet or wok, heat oil over medium heat. Add chicken; cook and stir 5 minutes. Season with salt and pepper. Stir in reserved juice and red pepper flakes. | Cook until internal temperature reaches 165°F. |
